Cherry Pie - A Taste That Takes You Back to Carefree Childhood.


This delicious cherry pie, with juicy cherries, tender sour cream filling, and crumbly dough made with cold butter, reminds me of childhood. It's easy to make, looks attractive, and tastes wonderful - this is a recipe you'll want to repeat over and over.

You will need:
- flour - 300 g;
- butter or margarine (cold) - 200 g;
- sugar - 3 tbsp;
- vanilla sugar or vanillin - 1 packet;
- salt - 0.5 tsp;
- baking powder - 1 tsp;
- egg - 1 piece;
- cold water - 1-3 tbsp (as needed).
For the filling:
- cherries (or other berries/fruits) - 500-700 g;
- flour - 1 tsp;
- cornstarch - 1 tsp.
For the filling:
- sour cream - 250-300 g;
- sugar - 100-130 g;
- vanilla sugar - 1 packet;
- eggs - 2 pieces;
- cornstarch - 40 g.
Method of Preparation
Sift the flour, grate the cold butter, and rub everything into crumbs. Add sugar, vanilla, salt, baking powder, egg, and if necessary, a little cold water. Knead the soft dough, wrap it in film, and chill in the fridge for 30-40 minutes.
Line a 26 cm diameter pan with parchment paper. Roll out the dough, place it in the pan, and make borders. Prepare the filling: if the cherries release juice, drain it. Add a little flour and cornstarch, and mix.
For the filling, mix sour cream, sugar, vanilla, eggs, and cornstarch until smooth. Place the cherry filling on the dough, and pour the filling over it.
Bake in a preheated oven at 180-190 °C for about 60-70 minutes, until golden brown. The pie comes out juicy, tender, aromatic, and tastes wonderful both warm and chilled.
